Ham Hash Skillet

Are you like me and trying to figure out all the ways you can use that leftover Christmas ham in your fridge? Well here’s a recipe you can try: Ham Hash Skillet. I made this on a whim with ingredients I already had on hand but I can think of so many ways to make it better. I simply fried a bag of frozen diced potatoes in my cast iron skillet, mixed in some diced leftover ham, layered it with a few slices of sharp cheddar cheese and topped it off with a few over medium fried eggs. I popped it in the oven just to melt the cheese and voila! So easy! You could fancy it up by adding onions or peppers to your skillet. And you could top it off with some avocado or a bit of sour cream when you serve it. This was a big win in our house because the kids loved it and it used up some of that leftover ham.

Ham Hash Skillet

30ish minutes (if that) to make start to finish

Ingredients:

  • one bag frozen diced potatoes

  • 12 tablespoons oil

  • one cup diced ham or more as desired

  • 4-5 slices sharp cheddar cheese

  • 5 eggs

  • salt and pepper to taste

Instructions:

  1. Cook potatoes in two batches. Add 6 tablespoons of oil in a cast iron skillet and cook half the bag of potatoes. Stir frequently until golden brown. Use a slotted spoon to remove from skillet and place in a paper towel lined bowl. Then repeat to cook the second batch.

  2. While potatoes are cooking dice about a cup (or more if you like) of ham. Once potatoes are done, add both batches of potatoes and ham to the skillet and stir gently.

  3. Remove from stove and place 4-5 slices of cheese on top.

  4. Fry 5 eggs over medium separately and then place them on top of the cheese.

  5. Place skillet in oven at 325° for about 5 minutes or until cheese is melted.

  6. Serve and enjoy with desired toppings.
