Fast and Delicious Dinner Idea

It’s been a while since I’ve shared a recipe but last night’s dinner inspired me because it was ridiculously fast, easy and delicious. It was too good not to share. I love to cook. But during the week when we’re already tired from school, work, homework and the various extra curricular activities we’ve got going on, it can be tempting to just run through a drive-thru or cook a frozen pizza. Don’t get me wrong—we do that plenty. But we enjoy eating “real food” so I try my best to cook almost every night. Last night’s meal was gnocchi with chicken sausage and roasted green beans. Start to finish it only took me 20 minutes to make and it can be done all in one large roasting pan in the oven (although I chose to do my gnocchi in a skillet on the stove according the directions on the package.)

Gnocchi with Chicken Sausage and Roasted Green Beans

Here’s what you’ll need:

2 packs of Publix Greenwise Smoked Chicken Sausage (Italian with Provolone and Romano)

1 package of fresh, trimmed grean beans

2 packs of Rana brand skillet gnocchi (in the refrigerated section near the cheese, butter, etc.)

olive oil, sea salt, cracked black pepper and garlic powder

Instructions:

In a bowl, toss the green beans in the olive oil and sprinkle with salt, pepper and garlic powder. Stir the beans to make sure they are covered well with the oil and seasonings. Spread beans onto a large roasting pan or baking sheet. Slice the chicken sausage and add to the pan of beans. At this point you can toss the gnocchi in olive oil and add it to the pan also if you don’t want to cook it separately. Place the pan in a 400 degree oven for 8 minutes. Remove and stir. Put it back in and roast for 8 more minutes. **Now if you want to cook your gnocchi on the stove like I do, you just follow the package directions. You’ll melt some butter in a skillet, add the gnocchi and stir it often for about 10 minutes until it has a golden crust on the outside. Then you just add it to the pan of beans and sausage when it’s done.

That’s all there is to it. Really. It is such an easy dinner idea and the kids loved it too! I hope you’ll give it a try.
